A traditional Irish fruit Loaf with a twist.
- 150ml Mazawattee Masala Chai (one tea bag)
- 375g dried fruit
- 225g self raising flour
- 175g Demerara sugar
- 1 egg
- ¼ tsp ground mixed spice
- Mix together the Masala Chai, dried fruit and sugar.
- Cover and leave overnight.
- Heat the oven to 160°C.
- Grease and line the base of a 1kg loaf tin.
- Add a beaten egg to the mixed fruit, then gradually stir in the flour.
- Place the mixture into the tin and bake for about 1½ hours.
